This wine possesses delicate, toasty, mineral-tinged aromas of poached pear/apple and honeydew; on the palate, vibrant and long persistent fine bubbles are laced with flavours of dry yet fruity with lively citrus and toasty almond undertone and a distinctive minerality on the finish.

“Ceremony is a traditional method sparkling wine from multiple vintages made entirely of Prince Edward County grown chardonnay. Notes of fennel, rosebud and pear on the nose with a crisp, mouth watering palate. Mineral and crunchy saline along with white grapefruit and lemongrass refresh and linger on the finish. “Made entirely from chardonnay and by the ‘traditional method’, this has a minimal dosage. It’s a really lovely sparkling wine, bone dry, showing nicely defined and nuanced fruit, with vibrant, zesty acidity.
